Omelets are such a great source of protein if you pack them with the right ingredients. These mini ones are loaded with veggies and ooey gooey almond cheese. This recipe will become a family favorite in no time.
We used almond cheese and onions this particular recipe, but feel free to customize it to what you have on hand, any kind of vegetables will work pretty well, you can also add any lean meats. So, the flavor possibilities are practically endless! By varying the type of meat, vegetables, and cheese you can tailor them to suit anyone’s tastes.
Another plus to this recipe is that you can eat them on-the-go. No excuses for not eating a healthy breakfast each morning, it will take you less than 10 minutes and you can even use Holstein’s Brownie Maker to make half mini omelets and half oatmeal pancakes for a complete morning starter!
#HolsteinTip: They might be a little tricky to get off of the brownie maker since they are not as firm as other recipes, so wait for them to cool off for a bit and use a silicone spatula to carefully remove.

¼ cup of onion (chopped)
¼ cup of shredded almond cheese
1 teaspoon of baking soda
salt and pepper to taste
– Mix all the ingredients in a bowl
– Coat the surface of the Brownie maker with Olive oil spray
– Pour the mixture into the shaped cavities, close the lid, and bake
